Should I be pinching out the tops so the plants grow bushy instead of
straight up?  I seem to remember doing that years ago but last year I didn't
and because of that they needed staking.

I would only pinch them out if they get too tall or if the tips get
infested with blackfly.  Let them flower and start to set pods.

Although I've got a big garden I just grow Dwarf broad beans (The Sutton).
They don't need staking - grow to a couple of feet and give me a very good
crop each year - I love them :-)
