Fascinated to watch raymond blanc visiting an apple orchard and grafting
different species onto another tree....
The orchard owner had succesfully managed to graft over a hundred different
species onto one tree and, here's the really fascinating bit, they all
retained *their* original type even when grown and matured.....they didn't
take on any of the characteristics of the host tree..!
I'm sure you experts here won't be too amazed but I most certainly
was...both with the number of grafts carried out (and possible) and the
donor retaining 'its' own identity...
Fascinating also how, at that level of cuisine, the finesse of choosing
which apples to use and for which dishes because of (obviously, I suppose..)
their texture and flavour.
...and hasn't raymond blanc got a nice working garden at the Manoir....
Anyone actually been there? or better still, eaten there?
Is it worth the money...?
